Every cook has those days where there’s simply no time for
that over-the-top, gourmet meal we aspire to make. Between the list of to-do’s we have for the day, thinking of the big
question – “what’s for dinner?” – is often dreaded. On these types of days I’ll
often bake or sear salmon with a side of fresh Balsamic Asparagus. It’s simple AND healthy - a win/win!
Balsamic Asparagus
2 lb fresh or frozen asparagus, trimmed (approx. 40 spears - I used frozen grilled asparagus from Trader Joe's)
3 tablespoons aged balsamic vinegar
2 tablespoons olive oil
2 tablespoons minced red onion
½ teaspoon minced garlic
Pinch of salt
Ground black pepper
Heat oven to 425 degrees. While preheating, place the
asparagus on a greased baking sheet, spaced evenly. Whisk balsamic, oil,
garlic, and red onion together in a small bowl and drizzle the mixture evenly
onto the asparagus. Place the baking sheet in the oven for 12-14 minutes,
turning once, and sprinkle with salt and pepper to taste. Voila – a flavorful and
healthy side dish.
Makes 4-6 servings as a side.
